The lords of the Manor - what a chapter this was.
It was all French when I took over the kitchen at The Lords of the Manor. The meat used, cheeses and ingredients purchased for the menu. I needed to strip this place back to basics and do things right but simply to start. There were a few decent lads there in Jerry and Dean and we made a good start but all that French meat, cheese and butter had to go. It’s an English country house!!!! So we set about researching suppliers from our locality, but they had to be the best. We were surrounded by big hitters, Le Champignon Sauvage, Le Manoir aux Quat’Saisons, Whatley Manor, 5 North Street were all flying high and producing unbelievably high standards. This was going to be tough. But not impossible.
