I kind of made myself useful to the chefs instead of doing nothing. Peeling, scrubbing, cleaning, sweeping. Anything to be helpful and pass the time. He writes. It was unnerving and daunting but at the same time almost euphoric as I learned recipe after recipe, technique after technique and slowly but surely ticked off a list of jobs any kitchen junior chef would be happy to have learned. I was super lucky to have great people around me and was advised to find a small kitchen where the Chef would take me under his wing to mould me and teach me. So that was my intention. Find a smaller kitchen where there were no hiding places and commit myself to cooking entirely. Myself and my girlfriend left our homes at 16yrs old in 1992 and started our new lives away from everything we knew.
